Focus on Le DUKE !
Le DUKE, official provider of the FISE staff's meals, has been pleasing our taste buds since the beginning of the week with its burgers and pasta in restyled sauces. You can find them all year long in Montpellier and surroundings. It's time for you to know a bit more about them.
Where can we find you when it's not FISE time ?
All over the place ! The truck travels, we put all our locations on facebook. Our next six weeks will be super busy, we'll announce all of our sites for lunch meals, often near businesses. We're always around Montpellier, except for this summer as we'll go to Toreilles (near Perpignan) to make a small « guinguette ».
Do you need a solid organization to work at the FISE ?
Yes it's quite hard because there's something like 300 meals to make everyday. As everything is fresh and we have a limited space, we need to get our supplies pretty much permanently and try to anticipate because there are times where it's busier. It's big logistics.
We are 4 : Antho, François (aka Fanfou), Gilles and me (J.P.) to work on it.
Fanfou and myself have been working since a long time at the FISE, we are actually the instigators of the « playmobiles » (name found by Eric, shout out to Eric !).
What's your secret recipe ?
There's no secret really, it's just that we cook as if we were doing it for ourselves, we only use fresh products and everyday we offer a new menu. We have a Duke sauce that is a bit of a secret, it's a base of mayonnaise and we add a lot of things inside. Also, we have caramelized onions to give a bit of a sweet taste to a braised pork that we'll introduce next year.
Quel sera le menu de demain ?
We'll probably make what people prefered, a rather classic base for burgers. As for the pasta, most likely a kind of revisited carbonara sauce.
Did anyone fall sick ?
No, people seem to be in shape, it must be a bit because of us !
When is the frappé (iced coffee) coming back ?
Everyone is asking for it ! We should have had it this week but I couldn't take care of it this time. So, we promise we'll have it next year !
